Marrakech - Cooking Class
Today we have a very special foodie experience at Amal Center Cooking School. Amal is a
non profit organization whose mission is to better the lives of disadvantaged women through
job training and placement in the restaurant industry. They will teach us how to make
delicious Moroccan tajines, couscous, and pastilla. We’ll pick herbs for tea in their garden
and spend some time getting to know the ladies of Amal.
The afternoon and evening are yours, and we recommend making good use of your camera,
sipping some tea in the city center to people watch, and soaking up the beautiful city of
Marrakech.

Day 4: Meknes and Fes
Highlights: Roman ruins at Volubilis and imperial cities of Meknes and Fes
We have some driving to do today (about 5.5 hours total), but plenty of stops and breathtaking views to break it up.
We’ll stop to stretch our legs in Meknes, where there is a calmer medina where shopkeepers are not as pushy to make a sale. While Meknes is quite large, the two main areas of interest are the Ville Impériale (Imperial City) and the manageable medina.
We’ll be sure to check out the grand Bab al-Mansour gate and the Mausoleum of Moulay Ismail. Next, we’ll visit the Roman ruins of Volubilis (think astonishingly well preserved mosiac floors!), a UNESCO protected site, founded in the 3rd century BCE, it remains incredibly well-preserved. We’ll have stunning views of the Rif Mountains, and learn some more of Morocco’s rich history.
Once we arrive in Fes, you will have some time to explore the city on your own. You may choose to take a hot shower relax, and enjoy this extra special, luxury riad that has a restaurant as beautiful as the rooms.

Day 5: Fes & Things
After breakfast at the Riad, we will meet with our local guide to explore Fes, the oldest city in Morocco. You are welcome to soak up all the history from our tour guide or choose to wander solo to people watch, enjoy the food and views, or whatever! Our visit starts with the Royal Palace gate, the Jewish quarter, the first Mellah ever built in Morocco in the 16th century.
After a stroll through town visiting historical and ancient sites, including the famous Al Karaouine University, the oldest in the region, the tanneries, the Attarine museum and Mulay Idriss mausoleum. After lunch, we will go to the tiles cooperative and then experience a wonderful panoramic view of the whole medina of Fes.
Take the rest of the afternoon to relax, wonder solo, or laze around our riad.

Day 6: The Blue City of Chefchaouen
Say goodbye to Fes this morning, we are going to the blue city Chefchaouen (approx. 3.5 hours).
During the drive today, we will have stunning views of the Rif Mountains or the chance for a nap.
Once we arrive in beautiful Chefchaouen, you have the rest of the day to wander this unique, colorful town.
Discover Plaza Outa el-Hammam, the main square named for the number of hammams which used to encircle it. Find a restaurant or café for a bite to eat, before browsing the many shops offering traditional wares. Visit the Grand Mosque and kasbah (old fortress or fortification) and tour the kasbah's garden, museum, and even some of its old prison cells.
As the evening approaches, ascend the path leading to the never used, white Spanish Mosque (20 to 30 minutes) to enjoy one last view over Chefchaouen as the sun sets behind the mountains.

Day 7: Chefchaouen - Hammam
We’ll wake up a bit early today to beat the heat for our hike at Cascades d’Akchour. About an hour away from Chefchaouen, these beautiful waterfalls and paths are well worth the walk (about 2-3 hours total).
We’ll then head back to the blue city, have some lunch and have the option of going to a traditional hammam to bathe like the ancients did.
This experience requires some nudity (underwear or bathing suit bottoms is fine - that’s it), but it’s an experience you’ll never forget, and hey, we’re amongst friends.
You will have the choice:
- to visit a hamam made especially for tourists and boasts extra special pampering or
- live like the locals and go to a more off the beaten path bath house.
Up to you! The rest of the day is free.

dinner.
